Onion Rings Are So Hotpocket!


OMG I love onion rings! I had some in Spokane at zips and then also at FatBurger in Seattle. Yummy. Yes I tweeted both times too. LOL So a dear friend sent me a recipe and said I could share here so I am. W00P W00P Thank you.

I know some of you might not like onions, but if you know anyone who likes
onion rings while trying to avoid calories, these are the unfried version
and they are great! I made some today.

Get a large sweet onion (Walla Walla or other sweet version) and cut into
1/2 inch slices and separate

have a bowl of flour with some seasoning salt mixed in, a bowl of egg
substitute, and a bowl of bread crumbs (I used Italian from a can, but I
suppose you could make your own and I mixed with matzo meal, but by itself
is okay too).

Preheat oven to 400 while making up the rings

Dip onion slice one at a time into flour, than egg substitute, than bread
crumbs and put onto a Pam sprayed, large, shallow baking pan.

After you fit as many as you can (smaller ones inside larger ones) spray the
top of each of these and than bake for 10 minutes. Turn and spray again and
bake another 7-10 minutes.

Although they take a little time, they taste great! About 15-20 calories
each, instead of 100 each for fried!
